Mini BBQ Meat Loaf Dish

My husband and I had this tonight or dinner. It is a mix of a recipe I saw on Rachel Ray and a recipe my husband, Nick, heard about from a friend. It is Meat Loaf with a twist. Instead of using tomato paste you use BBQ sauce. It was very tasty. I highly recommend this one.

What you need:

  1. onion                    (about 1/8 cup per individual loaf)
  2. pepper                 (about 1/8 cup per individual loaf)
  3. hamburger         (about 6 oz per individual loaf)
  4. eggs                       (about  1/2 egg per individual loaf)
  5. crackers              (about 4 cracker per individual loaf)
  6. BBQ sauce           (about a tablespoon per individual loaf)

What you do:

You set your oven to 350 degrees, chop up the onion and pepper, mash-up your crackers, and then combine everything. The hamburger, the egg (or two depending on how many you are making), the chopped up onion and pepper, the BBQ sauce and the smashed crackers. I think it is easiest to use my hands to mix it all together. Then form the mixture into individual mini loafs

Throw your loafs in the oven. They take about 30 minutes to cook, depending on the size of the loaf you made. You can check with ameat thermometer ofrby pulling them out, cutting one open and seeing if all the pink is gone. I prefer no pink.
