Veggie Eggs and Bacon

This is a typical breakfast for me:

I start with cooking the onions in one pan and the bacon in another. When the onions carmelize I add the pepper and then a little later the eggs.

Nutritional Bonus:

According to “The 150 Healthies Foods on Earth”, peppers an excellent source of vitamins C and A, and the mineral potassium. They are also one of the few food that contain lycopene, which research has shown to lower the risk of prostate cancer.  Also the natural vitamin A and other compounds in pepper may in fact turn out to be protective. Some research indicates that exposure to carcinogens in cigarettes induces vitamin A deficiency, so foods rich in vitamin A counter that and provide some level of protection.
